Cheese Cornbread

  1. Preheat oven to 400*; spray 12 muffin tin with Pam.
  2. In large bowl, combine cornmeal, flour, baking powder and salt.
  3. In a small bowl, beat the buttermilk and egg.
  4. Pour over the flour mixture; add cheeses, corn, and jalepenos.
  5. Stir just until mixed.
  6. Do not over stir.
  7. Transfer to tin.
  8. Bake until golden brown, 20-25 minutes.
