Cheese and Thyme Stuffed Chicken

Chicken breasts stuffed with a crunchy, cheesey and herby filling and wrapped in prosciutto.

  1. Preheat the oven to 400°F Heat the oil in a pan and fry the shallots for 5min until golden. Add the pine nuts and cook for 2-3min until golden. Take off the heat, stir in the breadcrumbs and thyme and season well.
  2. Slice one chicken breast two thirds of the way through the middle and fill with a quarter of the breadcrumb mixture and a quarter of the cheese. Wrap 2 slices of prosciutto around and put on a baking sheet. Repeat with the other chicken breasts.
  3. Roast in the oven for 30min until the chicken is golden and cooked through.
