Cheese and Pepper Chips Alla Romana

Tasty appetizer. Very popular lately in Rome's pizza restaurants.

Serves: 4

Ingredients

  • 600  g potatoes (about 4 medium)
  •  vegetable oil (or favorite frying oil)
  •  black pepper (to taste)
  •  salt (to taste)
  • 14 cup  finely grated  pecorino cheese or 14 cup parmesan cheese

Directions

  1. Clean and peel potatoes, cut them into slices of 2mm circa and wash away starch with cold water till water runs clear.
  2. Dry potatoes with a clean towel or leave them out to dry for about 15 minutes.
  3. After they are dry, deep fry them in the oil till lightly browned and sit them on paper towel to dry (do at least 4 batches or they won't cook evenly). When dry from the oil cover them in pepper, salt and cheese.
