Cheese and Pepper Chips Alla Romana

Ingredients
- 600 g potatoes (about 4 medium)
- vegetable oil (or favorite frying oil)
- black pepper (to taste)
- salt (to taste)
- 1⁄4 cup finely grated pecorino cheese or 1⁄4 cup parmesan cheese
Directions
- Clean and peel potatoes, cut them into slices of 2mm circa and wash away starch with cold water till water runs clear.
- Dry potatoes with a clean towel or leave them out to dry for about 15 minutes.
- After they are dry, deep fry them in the oil till lightly browned and sit them on paper towel to dry (do at least 4 batches or they won't cook evenly). When dry from the oil cover them in pepper, salt and cheese.
