Cheese and Cracker Meat Loaf

Ingredients

  • 12 cup  finely diced  red pepper
  • 1  cup  chopped onion
  • 2  tablespoons shortening
  • 1 12 lbs ground beef
  • 2  cups  coarsely crumbled  saltines
  • 1  teaspoon salt
  • 12 teaspoon  celery salt
  • 12 teaspoon paprika
  • 14 teaspoon pepper
  • 2  eggs
  • 1  cup milk
  • 12 lb cheddar cheese, cut into 1/2 inch cubes
  • 1  tablespoon butter

Directions

  1. Saute red peppers and onions in shortening until soft. mix ground beef lightly with saltines, salt, paprika, pepper, eggs and milk until well blended. Add pepper and onion mixture then the cheese cubes. Pack lightly into oval shape and score top with criss cross pattern. Bake at 350 degrees for 1 hour or until brown.
