Cheddar Potato Skillet

This is great for leftover mashed potatoes.

  1. Melt 1 tbsp butter in non-stick pan.
  2. Saute onions.
  3. Toss cooked onions with the potatoes and half the cheese.
  4. Melt remaining butter in pan.
  5. Pat potato mixture into pan.
  6. Sprinkle with remaining cheese.
  7. Cover and cook over medium heat until 8 to 10 minutes.
  8. The underside should be golden and the cheese should be melted.
