Cheat's Chocolate Eclairs

Yields: 12 eclairs

Ingredients

  • 250  ml  double cream
  • 1  teaspoon vanilla
  • 1  tablespoon icing sugar, sifted
  • 12  sponge finger  biscuits, halved lengthways
  • 125  g dark chocolate, melted
  • 14 teaspoon  vegetable oil

Directions

  1. Whisk cream, vanilla and icing sugar together in bowl until thick.
  2. Place the bases of biscuits on a wire rack.
  3. Spoon on to them the cream mixture.
  4. Top with remaining biscuits.
  5. Mix together the melted chocolate and oil.
  6. Spread this mixture over the tops of the biscuits.
  7. Serve within the hour or they will go soft.
