Cheap Gfcf Nachos

We eat this at least once a week because it is so cheap and easy! It is a variation on Sweet Onion and Beans, another recipe I have posted. This freezes VERY well and tastes great the second day! Show more

  1. Soak beans in a bowl full of plenty of water overnight.
  2. Drain and rinse beans and put into a large pot of boiling water, reduce heat, cover, and simmer for about 2 hours or until done. Add water as needed--you cannot add too much water!
  3. Dice the onion, tomato, pepper, and garlic.
  4. Add garlic, onions, salt, and oil to a fry pan over medium heat. Saute for about 5 minutes.
  5. Add other vegetables and sugar and raise heat to medium-high, saute for another 5 minutes. Saute longer if you want mushier veggies (some kids will prefer this).
  6. Add beans and chili powder and cook until heated through, then reduce heat to low, cover, and let it sit for about 5 minutes.
  7. Serve hot over corn chips. Put some fresh cilantro on top if you have it!
