Champagne Ice

Yields: 2 1/2 quarts
Ingredients
- 1 1⁄2 cups sugar
- 3 cups water
- 1 1⁄2 tablespoons grated lemon rind
- 1⁄3 cup fresh lemon juice
- 2 (750 ml) bottles champagne
Directions
- Mix together all the ingredients until well combined.
- Transfer mixture to the freezer can of a 1-gallon electic ice cream freezer.
- Freeze according to the manufacturer's directions.
- Ripen for 1 hour.
