Caviar Potatoes

Ingredients

  • 12  red potatoes (1 1/2 inches in diameter)
  •  salt and pepper
  • 12 cup sour cream
  • 1  ounce  caviar (black, red and or or golden)

Directions

  1. In a medium saucepan, cook potatoes in boiling salted water over medium high heat until tender, 10-15 minutes. Drain and let cool.
  2. Halve potatoes. Cut a thin slice from the rounded bottom of each potato half so it will stand upright.
  3. Using a melon baller, remove center from each potato half, leaving a shell ¼ inch thick. Season cavities with salt and pepper.
  4. Using a small spoon or a pastry bag fitted with a star tip, fill potato cavities with sour cream.
  5. Top each with a dab of caviar.
