Caviar Cucumber Boats

A refreshing bite of cool cucumber, whipped cream cheese, fresh dill, lemon zest and caviar.

Ingredients

• 1 (2 ounce) jar  red  salmon caviar (like Romanoff)
•  English cucumber, cut 1/2-inch thick slices
• 1⁄3 cup  whipped cream cheese
• 1  teaspoon  chopped fresh dill
•  black pepper
•  fresh dill sprigs or  lemon zest

Directions

1. Scoop out center of each cucumber slice with a small melon baller.
2. In a small bowl combine cream cheese, chopped dill and black pepper.
3. Using a small spoon or a pastry bag, fill the center of each hollowed cucumber slice. Top each with a spoonful of caviar. Garnish with dill sprigs.
