Caviar Cucumber Boats

Ingredients
- 1 (2 ounce) jar red salmon caviar (like Romanoff)
- English cucumber, cut 1/2-inch thick slices
- 1⁄3 cup whipped cream cheese
- 1 teaspoon chopped fresh dill
- black pepper
- fresh dill sprigs or lemon zest
Directions
- Scoop out center of each cucumber slice with a small melon baller.
- In a small bowl combine cream cheese, chopped dill and black pepper.
- Using a small spoon or a pastry bag, fill the center of each hollowed cucumber slice. Top each with a spoonful of caviar. Garnish with dill sprigs.
