Cauliflower Soup With Cheese Fritters

Ingredients
- 1⁄4 cup water
- 2 tablespoons butter
- 1⁄4 cup flour
- 1 pinch salt
- 1 egg
- 2 ounces crumbled very firm blue cheese
- 1 onion
- 2 tablespoons butter
- 1 garlic clove
- salt
- 1 head cauliflower
- 1 quart water or 1 quart stock
- nutmeg
- cayenne
- 1⁄2 cup cream
Directions
- Add 1/4 cup water, 2 tbsp butter, pinch of salt into a pot, bring to a simmer over a medium heat.
- Then stir in 1/4 cup flour, keep cooking it for a couple minutes or until the flour are completely incorporated.

- Once done, when warm not hot, throw in 1 egg, Keep twisting.
- Then make them as a ball, transfer to a bowl. chill through.
- Put 1 onion, 2 tbsp butter, 1 clove garlic, some salt into the pot,.
- Cook over med-low heat. Sweep the onion until sweet and soft.
- Then put in the cut head cauliflower and.1 quart water or stock. Bring it to a simmer for about 30 minutes or until the cauliflowers become soft and tender.
- Keep stirring to prevent sticking to the bottom. Or you can use other tools to do that.
- Add in some nutmeg, some cayenne and 1/2 cup cream. Stir well.
- Heat some vegetable oil in a pan at 350°F.
- Now take out the chilled bowl.
- Add 2 oz crumbled, very firm blue cheese in it. Fold and mix well.
- Use 2 spoons to form fritters.
- Then fry the fritters in the pan for 2-3 minutes until golden brown.
- Remove when done.
