Cauliflower Mashed Potatoes

Ingredients
- 1 head cauliflower
- 1 tablespoon margarine
- 1⁄4 cup skim milk
- salt and pepper
Directions
- Boil cauliflower until soft, about 20 minutes.
- Drain water and place cauliflower in a food processor. Add margarine, skim milk, and salt and pepper. Process until the consistency of mashed potatoes.
