Cauliflower Hummus

Ingredients
- 1 head cauliflower, cut into florets
- 1 cup vidalia onion, chopped (red or yellow if no vidalia)
- 1 garlic clove, minced
- 1 cup cilantro, finely chopped
- 2 tablespoons lemon juice
- 1 cup cashews (peanuts, almonds, pecans, you choose)
- 1⁄2 teaspoon sea salt
- 1⁄2 teaspoon fresh ground black pepper
Directions
- In a medium pot, steam cauliflower florets with 1 cup of water for 5 minutes or until soft.
- Combine all ingredients in a food processor; pulse until mixture forms a creamy consistency.
- Transfer to a serving bowl. Serve warm with crudites, crackers and toast.
- Enjoy.
