Directions

  1. Trim the cauliflowers and boil in salted water for around 10 minutes. Drain and leave to cool.
  2. Add the milk, butter and sieved flour to a saucepan. Bring the mixture to the boil whisking continuously. When the sauce thickens add the cheese, mustard powder, salt and pepper. Turn the heat to very low and simmer for about 5 minutes, stirring occasionally.
  3. Arrange the cauliflower in a glass casserole dish and pour over the sauce.
  4. Place the casserole dish under the grill and cook until the sauce begins to catch.
  5. Serve immediately.
