Cauliflower Casserole

Ingredients
- 16 ounces cauliflower, frozen
- 2 eggs, beaten
- 1⁄2 cup parmesan cheese
- 8 ounces mozzarella cheese, shredded
- 15 ounces ricotta cheese
- 4 tablespoons dry breadcrumbs, divided
- 1 teaspoon salt
- 1 teaspoon pepper
- 1⁄2 cup dry breadcrumbs
- 2 tablespoons parmesan cheese
Directions
- Cook cauliflower until tender.
- With a fork crush caulifower into smaller pieces but don't puree.
- In a large bowl combine cauliflower, eggs, 1/2 cup Parmesan cheese, mozzarella, ricotta cheese, 2 tablespoons bread crumbs, salt and pepper.
- Preheat oven to 350 degrees Fahrenheit.
- Grease a 12x8 pan; sprinkle with 1/2 cup bread crumbs.
- Pour mixture into prepared baking pan.
- Sprinkle with remaining Parmesan cheese, and remaining 2 tablespoons bread crumbs.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake 30 minutes more until browned.
