Cauliflower and Leek Soup

Yields: 2 cups
Ingredients
- 4 ounces cauliflower
- 4 ounces leeks
- 1⁄2 ounce parsley
- 1 vegetable bouillon cube
- 2 cups water
Directions
- Cut up the cauliflower and leeks and put into a pot with 2 cups of water and the bouliion cube. Boil until cauliflower is soft enough to put into a food processor or blender. While it's cooking, chop up the parsley. Once the cauliflower and leeks are cooked, add the parsley. Pour soup into food processor or blender and blend.
