Catupiri (Aka Catupiry)

This is not real catupiri that can only be found in Brazil, but it bears a strong resemblance to the real thing so multiple websites inform me. I don't know how long this takes to cook, so I just guessed.   1. Over very low heat, or a double boiler, melt the two cheeses together until they are completely blended.
  2. Remove the mixture from the heat, place it in a container and let it cool.
  3. Put the cooled mixture in the refrigerator for a few hours.
  4. Now you can use in any recipe that calls for Catupiry.
