Carrots With Marsala

Ingredients
- 1 1⁄2 lbs carrots, peeled
- 1 1⁄2 cups chicken stock
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon pepper
- 1 1⁄2 teaspoons sugar
- 1⁄4 cup dry marsala or 1⁄4 cup sherry wine
Directions
- Cut carrots into ½ inch slices. Combine carrots with ¾ cup stock, salt and pepper. Cook 3 minutes or until stock is almost evaporated.
- Add remaining stock, cover and cook as above. Sprinkle with sugar and cook, 2 minutes or until the carrots begin to brown.
- Add Marsala and cook, 2-3 minutes longer.
