Carrot Rice Casserole

Ingredients
- 4 tablespoons butter
- 1 lb carrot, grated
- 1 onion, chopped fine
- 1 1⁄3 cups mozzarella cheese, shredded
- 2 cups cooked rice
- 2 eggs, beaten
Directions
- Melt butter.
- Add grated carrots and onions; saute for 3-4 minutes.
- Stir in cheese, cooked rice and eggs.
- Pour the mixture into a greased 11x13 baking dish.
- Bake @ 350 for 20 minutes.
