Carrot Raisin Salad

Ingredients
- 2 1⁄2 cups shredded carrots
- 3⁄4 cup chopped celery
- 1⁄3 cup raisins
- 1⁄3 cup coarsely chopped walnuts
- 3⁄4 cup fat-free mayonnaise
- 1⁄2 teaspoon Dijon mustard
- 1 -2 teaspoon sugar
- 1⁄8 teaspoon salt
- lettuce leaf (to garnish)
Directions
- Combine carrot, celery, raisins and walnuts in a medium bowl. Add remaining ingredients, except lettuce, stirring until blended.
- Serve on lettuce lined plates.
