Carrot Muffins With Apple

Yields: 12 muffins

Ingredients

  • 1 34 cups  Raisin Bran cereal
  • 1 14 cups flour
  • 34 cup sugar
  • 1 12 teaspoons baking soda
  • 1  teaspoon cinnamon
  • 12 teaspoon salt
  • 1  egg
  • 34 cup buttermilk
  • 14 cup  vegetable oil
  • 34 cup  finely chopped and peeled apple
  • 34 cup  grated carrot
  • 14 cup  chopped  nuts

Directions

  1. Mix first 6 ingredients in lg bowl.
  2. In small bowl, beat egg, buttermilk and oil.
  3. Stir into dry ingredients.
  4. Fold in apple, carrots, and nuts.
  5. Fill paper lined cups 3/4 full.
  6. Bake at 400* for 23 minutes.
