Carrot Loaf

A nice moist loaf with raisins and walnuts. I use apple sauce instead of oil and whole wheat flour.

  1. Grease a loaf pan.
  2. Cream butter, sugar and vanilla, beat in syrup, then the eggs one at a time, beat until well combined.
  3. Stir in carrot, raisins and walnuts.
  4. (Don't worry if the mixture looks curdled it will come right when the flour is added.) Stir in sifted dry ingredients; stir until combined.
  5. Pour mixture into prepared pan.
  6. Bake on convection setting at 350 degrees for 50 minutes. (Add 1/3 more time for regular oven).
  7. Stand about 5 minutes before turning on to a wire rack.
