Carrot Cassorole

An old recipe out of the friends of 4-H cookbook.

Serves: 4

Ingredients

  • 10  large carrots
  • 1  onion, chopped
  • 2  cups milk
  • 3  eggs
  • 2  cups  crackers or 2  cups  breadcrumbs
  • 3 -4  tablespoons butter
  •  salt and pepper

Directions

  1. Cook and mash carrots. Add rest of ingredients. Bake in a 9 x 9 inch baking dish for 1 hour in a 350* oven.
