Carrot Cake

Ingredients
- 2 cups sugar
- 1 1⁄2 cups oil
- 4 eggs
- 2 cups flour
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 1 1⁄2 cups raw carrots, grated
- 1 1⁄2 cups walnut pieces
Directions
- Mix sugar, oil and eggs.
- Sift flour, soda, salt, baking powder and cinnamon and add to the sugar mixture.
- Add the carrots and nuts.
- Bake at 325 for 30-40 minutes or until a toothpick comes out clean when poking in the center of the cake.
- I use Betty Crocker Whipped Cream Cheese frosting for this, but the Icing recipe is as follows: 1 box powdered sugar, 8 oz. cream cheese, 2 teaspoons vanilla, 1/2 stick butter. Cream all ingredients together and frost a completely cooled cake. Enjoy!
