  1. Cake:
  2. Combine Sugar and Oil.
  3. Add Eggs and beat until well mixed.
  4. Mix in Flour, Cinnamon, Baking Soda & Salt.
  5. Slowly mix in Carrots & Nuts (nuts optional).
  6. Pour into a 9" x 13" pan and bake at 325 degrees for 50 - 60 minutes.
  7. Cool Before Frosting.
  8. Frosting:
  9. Soften Butter.
  10. Combine Cream Cheese, Confectioners Sugar, Butter, Coconut and Vanilla Extract.
  11. Beat and apply to cooled caked.
  12. Apply to Cooled Cake.
