Carrot Cake

Ingredients
- 2 cups granulated sugar
- 1 1⁄2 cups vegetable oil
- 4 eggs
- 2 cups sifted flour
- 1 teaspoon cinnamon
- 2 teaspoons baking soda
- 1 teaspoon salt
- 3 cups carrots, grated
- 1⁄2 cup pecans, chopped
- 8 ounces cream cheese
- 1 lb confectioners' sugar
- 1⁄4 lb butter
- 1⁄2 cup coconut, grated
- 2 teaspoons vanilla extract
Directions
- Cake:
- Combine Sugar and Oil.
- Add Eggs and beat until well mixed.
- Mix in Flour, Cinnamon, Baking Soda & Salt.
- Slowly mix in Carrots & Nuts (nuts optional).
- Pour into a 9" x 13" pan and bake at 325 degrees for 50 - 60 minutes.
- Cool Before Frosting.
- Frosting:
- Soften Butter.
- Combine Cream Cheese, Confectioners Sugar, Butter, Coconut and Vanilla Extract.
- Beat and apply to cooled caked.
- Apply to Cooled Cake.
