Carrot Cake

Ingredients
- 2 cups flour
- 2 cups sugar
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 1 1⁄4 cups vegetable oil
- 2 lbs carrots, grated
- 4 eggs
- 1⁄2 cup nuts (I used walnuts)
- 2 teaspoons vanilla
- 1 (16 ounce) container cream cheese frosting
Directions
- Combine flour, sugar, baking powder, baking soda. salt, and cinnamon in a large bowl. Mix until blended.
- Add oil to flour mixture while mixing. Then add the carrots and eggs, one at a time, mixing well after each addition.
- Stir in nuts and vanilla; mix well.
- Pour into a well greased and floured 9X13 pan. Bake in a preheated 350°F oven 50 to 60 minutes or until done.
- Allow to cool thoroughly. Frost with frosting.
