Carrot Cake

Ingredients
- 2 cups sugar
- 1 1⁄2 cups Wesson Oil
- 2 cups carrots (grated)
- 2 cups cake flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 4 large eggs
- 1 1⁄2 cups pecans, chopped
Frosting
- 1 (8 ounce) package cream cheese
- 1⁄4 cup butter
- 1 lb confectioners' sugar
- 2 tablespoons vanilla
Directions
- Mix wesson oil and sugar. Add carrots. Mix and then add flour and spices. Add eggs one at a time. Bake for 25 minutes in a 300 degree oven.
- Cool. Ice with cream cheese frosting.
