Ingredients
Cake
- 3 cups sugar
- 3 cups self rising flour
- 2 teaspoons cinnamon
- 1 1⁄2 cups cooking oil
- 4 eggs
- 3 cups grated carrots
- 1 cup chopped nuts
Frosting
- 12 ounces cream cheese, softened
- 1⁄2-1 cup margarine, softened
- 1 teaspoon vanilla
- 1 1⁄2 boxes powdered sugar
- 1 cup nuts
Directions
- Grease and flour 2 9-inch or 3 8-inch cake pans.
- Mix all dry cake ingredients.
- Add oil and eggs.
- Add carrots and nuts.
- Mix well.
- Pour into pans and bake 25 to 30 minutes at 350.
- Mix all frosting ingredients well and spread between layers and top of cake.
