Carrot Burgers

I found this recipe on allrecipes.com & tweaked it a tiny bit by adding parsley & thyme.

Serves: 6

Ingredients

  • 1 12 cups carrots, diced
  • 2  cups  corn flakes, crushed
  • 2  eggs, beaten
  • 14 cup celery, finely chopped
  • 1  tablespoon onion, finely chopped
  • 12 teaspoon salt
  • 12 teaspoon parsley
  • 14 teaspoon thyme
  • 14 teaspoon sugar
  • 18 teaspoon pepper
  • 2  tablespoons  vegetable oil
  •  hamburger bun

Directions

  1. Place carrots in a saucepan with a small amount of water. Bring to a boil; reduce heat.
  2. Cover and cook for 5 minutes or until tender then drain.
  3. In a bowl, combine carrots, cornflakes, eggs, celery, onion, salt, sugar and pepper; mix well.
  4. Form into six patties & squash them down.
  5. Heat oil in a skillet over medium heat & cook patties for 3 minutes on each side or until browned.
  6. Serve on lightly toasted buns.
