Carrot Bread

Ingredients
- 2 eggs, beaten
- 1⁄2 cup canola oil
- 1⁄2 cup carrot, shredded
- 1 cup sugar
- 1 1⁄2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1⁄4 teaspoon salt
- 1⁄2 cup chopped nuts (optional)
Directions
- Mix carrots and all wet ingredients.
- Mix dry ingredients.
- Add the dry ingredients to the wet.
- Pour into well greased and floured loaf pan.
- Bake at 350 for 50-60 minute until fork comes out clean.
