Carrot-Apple Smoothie

Ingredients
- 3 medium carrots, peeled and sliced
- 3⁄4 cup boiling water
- 1 1⁄2 cups apple juice
Directions
- In a small saucepan cook carrots, covered, in the 3/4 cup boiling water for 20 min.
- Cool.
- Put this and the apple juice in the blender.
- Cover and blend until the carrots are smooth.
- Add additional apple juice if needed for desired consistency.
- Chill and serve.
