Carrot and Spice Muffins

Yields: 12 muffins
Ingredients
- 2 cups flour
- 3⁄4 cup sugar
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon baking soda
- 1⁄4 teaspoon ginger
- 1⁄4 teaspoon nutmeg
- 1 cup tomato juice
- 1⁄2 cup raisins
- 1⁄2 cup grated carrot
- 1⁄3 cup vegetable oil
- 1 egg
Directions
- In large bowl combine first 8 ingredients.
- In med bowl combine rest of the ingredients.
- Add egg mixture to flour mixture.
- Stir just until moistened.
- Spoon into greased or paper lined muffin pans.
- Bake 25 minutes at 375* or until toothpick comes out clean.
- Remove from pan.
- These are very good served warm.
