  1. Peel and finely grate carrots.
  2. Combine the lemon juice, olive oil, sugar, salt, pepper, (and mustard if desired) in a small mixing bowl.
  3. Rough chop the parsley.
  4. Combine everything in serving bowl.
  5. Adjust spices and oils to taste.
  6. Serve!
