Caribbean Chicken Kebabs

Ingredients
- 1 1⁄4 lbs chicken breasts
- 1 lime, rind
- 2 tablespoons lime juice
- 1 tablespoon rum or 1 tablespoon sweet sherry
- 1 tablespoon light muscovado sugar
- 1 teaspoon ground cinnamon
- 2 mangoes, peeled and diced
- cooked rice, for serving
Directions
- Cut the chicken in bite-sized chunks and place in a bowl with the lime, rum, sugar and cinnamon.
- Toss well and let stand for 1 hour.
- Save the juices and thread the chicken onto four wooden skewers, alternateing with the mango cubes.
- Cook under a hot grill or barbecue for 8-10 minutes, until the chicken is tender and golden brown.
- Serve with rice.
