Carbonado Bolivia

Ingredients
- 1 1⁄2 lbs beef, broiled and cut into cubes
- 3 cups water
- 1 teaspoon cider vinegar
- 1⁄2 teaspoon salt
- 1 bay leaf
- 1⁄2 teaspoon ground cumin
- 6 peppercorns
- 1 garlic, glove crushed
- 4 celery ribs, sliced
- 1 medium tomatoes, diced
- 1⁄2 cup peeled and cubed carrot
- 1 ounce onion, chopped
- 1⁄2 teaspoon oregano
- 4 medium apricots, cut into halves and pitted
- 4 medium plums, quartered and pitted
Directions
- Place meat in saucepan with water, vinegar, salt, bay leaf, cumin, peppercorns and garlic.
- Cover and simmer slowly for about one hour.
- Add celery, tomato, carrots, onion and oregano. Stir to combine.
- Add fruit. Cover and cook until fruits are tender.
