Caramlized Apples and Turnips

Got the recipe from this site. Have never tried turnips before but got a bunch in my Washington Green Grocer box. Show more

Serves: 2-3

Ingredients

  • 2  tablespoons butter
  • 2  lbs turnips, peeled and thinly sliced
  • 1  large  honeycrisp apple, peeled and thinly sliced (or similar)
  • 1  teaspoon maple syrup
  • 1  teaspoon sugar
  • 12 cup  vegetable stock
  • 1  teaspoon butter
  •  salt and pepper

Directions

  1. Heat 2 tablespoons of butter in a large skillet until very hot. Add the turnips and apples and cook until golden, tossing to brown on all sides. Add maple syrup, stir quickly and sprinkle with sugar. Add the stock and simmer for five minutes, covered. Stir in remaining teaspoon of butter and season with salt and pepper. Serve immediately garnished with a fresh herb sprig.
  2. (serves 2-3 as a side dish).
