Caramelized Onion and Brie Tarts

Yields: 24 tarts

Ingredients

  • 24  pre baked  miniature tart shells, bought or your own favourite recipe.
  • 2  large onions, thinly sliced
  • 2  tablespoons olive oil
  • 2  tablespoons brown sugar
  • 2  tablespoons  balsamic vinegar
  •  salt and pepper
  • 200  g  brie cheese, sliced into slivers without the rind.

Directions

  1. Heat oil in deep skillet on medium heat.
  2. Add onions and cook until transparent.
  3. Add brown sugar and vinegar and cook covered for 15 minutes over low heat until onions are caramelized.
  4. Season with salt and pepper as desired and cook on low until all moisture is evaporated.
  5. Cool slightly and spoon approx.
  6. 1 tablespoon into pre baked shells and top with a sliver of Brie cheese.
  7. Bake at 350 degrees for 15 minutes or until the cheese melts.
  8. Serve warm.
