Caramel Walnut Macaroons

Go ahead and use whatever nut you prefer.

Yields: 24 macaroons

Ingredients

  • 2  tablespoons flour, sifted
  • 12 cup brown sugar
  • 14 teaspoon salt
  • 2  large  egg whites, whipped till stiff but not dry
  • 12 teaspoon vanilla
  • 1  cup walnuts or 1  cup pecans or 1  cup cashews, chopped and toasted

Directions

  1. Mix flour,salt and sugar.
  2. Fold egg whites into dry ingredients.
  3. Add vanilla and cashews.
  4. Drop by teaspoonfuls onto a parchment covered cookie sheet at least 1-1/2 inches apart.
  5. Bake in a 350 oven about 20 minutes.
  6. Will be golden and crisp.
