Caramel Pudding Cake

Ingredients
Syrup
- 1 cup sugar
- 4 -5 cups water
Batter
- 1 cup sugar
- 2 cups flour
- 4 teaspoons baking powder
- 1 pinch salt
- 1 cup water
- 1 tablespoon shortening
- 1 cup raisins
- 1 teaspoon vanilla
Directions
- Spread sugar in frying pan and stir until caramelized.
- Add the water and simmer until sugar and water form a caramel sauce.
- Meanwhile, boil the raisins with the water and the shortening.
- Mix the first four ingredients together.
- Add the vanilla to the raisin mixture, and then add this to the flour mixture.
- Stir together.
- Put sauce in 9x13 pan and add the batter by spoonfuls over the top.
- Bake at 350º till warm and bubbly, approximately 30 minutes.
- Serve with whipped cream or ice cream over the top. Delicious!
