Caramel-Filled Chocolate Cookies

Ingredients
- 1 cup sugar
- 1 cup packed brown sugar
- 1 cup butter, softened
- 2 teaspoons vanilla
- 2 eggs
- 2 1⁄2 cups flour
- 3⁄4 cup unsweetened cocoa
- 1 teaspoon baking soda
- 48 Rolo chocolates, unwrapped
- 1 tablespoon sugar
- 4 ounces white chocolate, melted
Directions
- In a large bowl, combine 1 cup sugar, brown sugar, and butter; beat until light and fluffy. Add vanilla and eggs; blend well.
- In a small bowl, combine flour, cocoa, and baking soda; mix well.
- Add to sugar mixture; blend well. Cover with plastic wrap and refrigerate for 30 minutes.
- Heat oven to 375.
- For each cookie, with floured hands, shape 1 tablespoon dough around 1 candy, covering completely.
- Place 2" apart on an ungreased cookie sheet and bake 7-10 minutes.
- Cool for 2 minutes; remove from cookie sheets and let cool completely.
- In a small saucepan, melt white chocolate and drizzle over the cookies.
