Capsicum Relish

Ingredients
- 2 red capsicums, chopped
- 1 red onion, peeled and chopped
- 1 cup white wine vinegar
- 1 cup caster sugar
- 1 tablespoon chili
Directions
- In a medium saucepan over medium heat, mix together the capsicums, onion, vinegar, sugar and chillies. Bring to the boil, then reduce heat to simmer and stirring occasionally, cook 30 minutes or until thickened. Refrigerate at least 4 hours before serving.
