"can't Live Without" Corn Hash

Ingredients
- 1 tablespoon extra virgin olive oil
- 1 cup onion, minced
- 1 (4 ounce) can diced green chilies
- 1 teaspoon cumin
- 1 teaspoon unsalted butter
- 2 cups sweet corn
- 1 small zucchini, diced
- 1 cup red bell pepper, minced
- 1⁄4 teaspoon salt
- 1 teaspoon garlic, minced
Directions
- Heat the olive oil in a large skillet over medium heat. Add onion, chiles, and cumin to the oil and saute for about 5 minutes until the onion becomes soft.
- Add the butter, and then stir in the corn, zucchini, and red bell pepper. Add salt and garlic and stir well. Saute for 5 to 8 minutes longer.
