Candi's Apple Cake

- Mix apples and sugar. Let stand for 1 hour. Stir often so that mixture makes its own juice.
- Add dry ingredients, then oil, then vanilla and eggs. Do not use a mixer.
- Pour into a well greased and floured tube pan (or any pan); bake for 1 hour and 15 minutes at 350*. Frost with cream cheese frosting or thin glaze.
- In hot, humid weather, keep this cake in the fridge to prevent mold.
