Canadian Spiced Carrot Jam

Yahoo group files. This is excellent with meats, especially ham and game.

Yields: 4 half pints

Ingredients

  • 4  cups  finely chopped raw carrots
  • 3  cups sugar
  • 2  juice and grated lemons, peel  
  •  clove, allspice and cinnamon

Directions

  1. Place all the ingredients in a saucepan.
  2. Slowly bring to a boil over medium low heat, stirring constantly. Then, stirring often, cook over low heat 30 to 40 minutes, or until mixture is as thick as jam.
  3. Pour into prepared jars leaving a 1/4" headspace.
