Canadian Johnny Cake

Johnny cake with a Canadian twist.

Ingredients

• 2  cups flour
• 4 1⁄2 teaspoons baking soda
• 3⁄4 teaspoon salt
• 1  cup cornmeal
• 3  eggs, beaten
• 1  cup milk
• 1⁄2 cup pure maple syrup
• 3⁄4 cup shortening, melted

Directions

1. Mix eggs, milk, maple syrup and melted shortening.
2. Add dry ingredients.
3. Bake at 400F for about 30 minutes in a 9x9 pan.
