Canadian Bacon Stack-Ups

Cranberries and sweet potatoes aren't just for Thanksgiving anymore!

  1. Combine the cranberry sauce and light corn syrup in a bowl. Set aside.
  2. With an electric mixer, beat potatoes with butter, brown sugar, and ginger until light and fluffy.
  3. Slice bacon into 12 pieces.
  4. In a 10x6 baking dish, spread half of the potato mixture equally on half of the bacon slices.
  5. Cover with remaining 6 bacon slices and top each with a mound of potatoes.
  6. Drizzle cranberry sauce over stacks.
  7. Bake at 350 degrees for 45 minutes, basting once or twice with sauce in dish.
  8. This makes a lovely light meal when served with green beans or asparagus spears.
