Calzone ' Bar'

Easy and fun dinner for the fam. The trick, like any pizza night, is to lay out the fillings and allow each person to make their own calzone. For the crust, we buy french bread dough (un-baked) from our local grocery store bakery. A 1 lb. mound of dough can divide into 3 or 4 calzones, dependent upon how big you want to make them. I've included some filling below, but these can be changed to be as whatever you want. You can easily copy some of your favorite Old Chicago calzones using this recipe. This is a quick, easy dinner! Yields: 3-4 calzones

  1. Preheat oven to 400°F
  2. On a lightly floured surface, roll out each ball of dough into rounds with 1/6 inch thickness (much like a pizza).
  3. On one side, add the fillings of your choice.
  4. Fold over the other side and pinch to close the edges.
  5. After pinching, roll the edges back to further seal the crust.
  6. Transfer calzone (careful, don't tear it) to a lightly greased cookie sheet or jelly roll pan.
  7. Lightly brush the calzones with olive oil or butter (this will help it brown).
  8. Bake calzones for 15 minutes or until crust is brown all over.
  9. Serve with a side (for dipping) your favorite canned or homemade red sauce.
