California Zucchini Bake - Ww Core

Ingredients
- 1 lb lean ground beef (or ground turkey)
- 3 medium zucchini, thinly sliced
- 1⁄4 cup sliced green onions with top
- 2 teaspoons salt
- 1⁄4 garlic powder
- 2 teaspoons chili powder
- 1 (7 ounce) can chopped green chilies (or 2 small cans)
- 3 cups cooked brown rice
- 1 cup nonfat sour cream
- 2 cups grated fat-free monterey jack cheese
- 1 large fresh tomato, sliced (optional)
- salt and pepper
Directions
- Sauté beef, zucchini, onions and seasonings in lightly greased (sprayed) skillet until meat is no longer pink and veggies are tender-crisp, stirring frequently. Add green chilies, rice, sour cream and 1 cup cheese.
- Turn into a shallow 2 quart casserole (9x13). Arrange tomato slices on top. Season with salt and pepper. Top with remaining cheese.
- Bake 350°F for 20-25 minutes.
