California Grande Calamari

This is a wonderful dish based on a recipe from Isaac Cronin's book, The International Squid Cookbook, which in turn is based on a recipe from "...Ocean Garden Products, a San Diego based company with a strong belief in the future of the Grande Calamari." What more can I say? Show more

Directions

  1. Lay strips of Monterey Jack cheese, green chiles and red chiles in the center of each Grande Calamari fillet.
  2. Roll steak into a tube shape, securing with toothpicks or string.
  3. Dip into egg, then dredge through breading.
  4. Heat oil to 350°.
  5. Deep fry until golden brown, approximately 4 minutes.
  6. Pat off excess oil with paper towels and serve hot.
