California Chicken Platter

Ingredients
- 2 slices bacon
- 2 ripe avocados, sliced
- 3 tablespoons lemon juice
- 3 cups cooked chicken, diced
- 1⁄2 cup chopped celery
- 1⁄2 cup creamy bleu cheese salad dressing
- 1 tablespoon minced chives
- 1 small head romaine lettuce
- 2 medium tomatoes, cut in wedges
- 8 pitted black olives
Directions
- In a large skillet, cook bacon until crispy. Drain on paper towels, crumble and set aside.
- Meanwhile toss avocado with 2 tablespoons lemon juice.
- In a medium bowl, toss chicken with celery, crumbled bacon, blue cheese dressing, chives and remaining lemon juice.
- Mound salad on lunch plates lined with lettuce. Arrange tomato and avocado in a sunburst around chicken salad. Garnish with olives.
